Turkish Flatbread – Gozleme Recipe

Gözleme is a savoury traditional Turkish stuffed pastry cooked on a hot surface. Great for a snack or supper.


160 g (5½ oz, 1 cup) plain flour
80 ml (3 fl oz, ⅓ cup) water
½ teaspoon salt
Melted butter

Meat & Onion filling (Enough for 2 gözleme)
100 g (3½ oz) minced meat
½ small onion, chopped
1 tablespoon olive oil

Cheese & Spinach filling (Enough for 2 gözleme)
100 g (3½ oz) spinach
50 g (2 oz) crumbled feta cheese
½ small onion, chopped
1 tablespoon olive oil


Prepare the dough by placing the flour and salt in a bowl and adding enough water to make a soft dough.

Knead the dough for about 5 minutes until smooth and springy. Place the dough in a clean bowl, cover and leave for 15 minutes.

Meat & Onion filling: Heat the oil in a pan and sauté the onion gently for 2-3 minutes. Add in the meat and cook until browned. Season with salt and pepper.

For the Cheese and Spinach filling: Heat the oil in a pan and sauté the onion gently for 2-3 minutes. Add the spinach to the pan and cook until the spinach is fully wilted. Season with salt and pepper.

Cut the dough into four pieces and roll each piece into a ball. Roll each ball out to about 25 cm (10″) in diameter. Place filling into the centre of the dough and fold up the sides of the dough to seal the filling inside, forming a square in the process.

Place the parcel on a flat pan on a medium heat and cook for about 1 minute. Turn the parcel over and cook the other side for about 1 minute; brush the top surface with a little melted butter.


When cooked the gözleme should be speckled in appearance.
